As the US population becomes more diverse it is imperative that future nutrition professionals practice with cultural humility and competence. This course introduces students preparing for a career in food and nutrition to issues related to food, nutrition and culture by examining the intersection of ethnicity, religion, and socioeconomic status with food customs, food availability/disparity, food safety, food preparation, and nutritional health.
