The student will learn to make world class breads using Old World techniques and original methods from pre-fermented sponges and doughs. The secrets to crusty French bread, aromatic hearth bread, and sour dough bread will be revealed.

Classical and contemporary theories of war and peace; just and unjust wars; principles of strategic analysis, arms control, and security policy-making; the proliferation of nuclear, chemical, and biological weapons. The international trade in arms; nationalism, ethnic conflict, and wars of secession.

This course offers a survey of dances from different cultures, their histories, and their influences on contemporary dance and society. Cultural origins, significance, motivations and techniques will be explored experientially.

This course exposes students to the varied and rich traditions of dance in a wide range of historical and cultural contexts. Students develop a broad appreciation of dance that encompasses a variety of dance practices and traditions, including religious dance, folk dance, court dance, and social dance. Students develop tools for cross-cultural comparison to better understand the human impulse to dance and the social, political, and cultural conditions that support or repress dance expression.
